Black Beans And Coconut Rice

Ingredients
- 2 tbs Olive oil
- 2 stalks celery, finely chopped
- 1 medium white onion, finely chopped
- 1 Red bell pepper, finely chopped
- 1 yellow bell pepper, finely chopped
- 2 serrano chiles, minced
- 1 clove garlic, minced
- 3 cups Cooked white rice
- 2 cups cooked black beans
- 3/4 cup Unsweetened coconut milk
- 1 tsp Lime juice
- kosher salt and black pepper to taste
- 1/2 bunch fresh cilantro, chopped
- 1/4 cup toasted coconut
Directions
1. In a large skillet over medium-high heat, saut? Celery, Onion, Bell peppers, Chilies and Garlic until soft and starting to brown.
2. Add Rice, Beans, Coconut milk and Lime juice; stir.
3. Reduce heat and continue to cook for 5 minutes.
4. Add Salt and Pepper; stir in Cilantro. Garnish with Toasted coconut.
5. Serve hot. Makes 10 servings.
